We always like to try different Canadian cheeses, but two classic favourites of ours are Upper Canada’s Niagara Gold and Cottage Gold. Try them both! You can make these sandwiches your own by adding fresh tomatoes, jalapenos or any other great veggies or meats.
This dish is best enjoyed with our Rosé
Heat up a skillet/griddle to 350 or Medium High Heat
Butter bread slices on one side and place 2 slices butter side down in the skillet
Place the cheese on the bread, top with bacon, spinach leaves and another layer of cheese
Place the other buttered slices of bread butter side up on top of your sandwiches
Cook about 3 to 3 1/2 minutes on either side, or until it has reached desired golden brown
